Ancient Grains - Teff

Teff Grass


A few tidbits of information on Teff:
  • This whole grain is native to Africa.
  • Teff is high in protein, carbohydrates and fiber. It has 9 essential amino acids making it a complete protein. It is also rich in calcium and iron.
  • It is also an excellent source of vitamin C, a nutrient not commonly found in grains.
  • It takes 150 grains of Teff to weight as much as one grain of wheat.
  • Teff is gluten-free.
  • Teff can be eaten whole.
  • Teff is the grain that the long-distance runners from Ethiopia eat.
To cook:
1/2 cup Teff
2 cups Water
Pinch of salt

Bring to a boil and simmer covered 15-20 minutes until water is absorbed. Stir and let stand, uncovered 5-10 minutes.
